Caprese Pasta Salad
Ingredients:
– 12 oz (340g) rotini or fusilli pasta
– 1 pint cherry tomatoes, halved
– 8 oz (225g) fresh mozzarella cheese, cut into small cubes or use mozzarella pearls
– 1/4 cup fresh basil leaves, roughly chopped or torn
– 1/4 cup extra virgin olive oil
– 2 tablespoons balsamic vinegar
– 1-2 cloves garlic, minced
– Salt and freshly ground black pepper, to taste
– Optional: 1 teaspoon Italian seasoning or fresh oregano.
