– 1 cup grated Parmesan cheese
– Olive oil for cooking
For the BΓ©chamel Sauce:
– 4 tbsp unsalted butter
– 1/4 cup all-purpose flour
– 2 cups milk
– 1/2 tsp nutmeg
– Salt and pepper to taste
– 1 egg, beaten
Instructions:
1. **Prepare the Pasta**: Cook the pasta according to package instructions until al dente. Drain and set aside.
2. **Make the Meat Sauce**: In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened. Add the ground meat, breaking it up, and cook until browned. Stir in diced tomatoes, tomato paste, oregano, cinnamon, salt, and pepper. Simmer for about 15 minutes.
3. **Prepare the BΓ©chamel Sauce**: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually whisk in milk, stirring continuously until thickened. Season with nutmeg, salt, and pepper. Remove from heat and stir in the beaten egg.
4. **Assemble the Pastitsio**: In a greased baking dish, layer half of the cooked pasta, followed by the meat sauce, then the remaining pasta. Pour the bΓ©chamel sauce over the top and sprinkle with grated Parmesan cheese.
